Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract Makes Tasty
Dessert Delight's With Enchanced Flavors
A Century Of Flavor
Are you like me so busy with your everyday baking and making
those yummy Holiday treats that you've never used anything but imitation
vanilla extracts? That's all I've ever used. Mainly because it was what
my mom always used so I just naturally grab it and put it in the cart
every time I run low, which is often since I use it a lot. Well I've
discovered that mom may have been wrong about this! There is something
definitely richer tasting! It's the Pure Vanilla Extracts from a company called Nielsen-Massey. I've tried it
this past weekend and I just had to share my thoughts about it with you.
I was at first confused about their being Alcohol in it
because of the name, so I asked and they replied:
"Madagascar Bourbon Pure Vanilla is not related to the
American whiskey of the same name, but rather refers to
the Bourbon island chain of which Madagascar is a part.
This vanilla is one of the most popular flavors that
Nielsen-Massey carries. It has a sweet, creamy, mellow
taste that is good for general cooking and baking."
So now I know and so do you, see we can still learn something
new every day in the baking world.
I'm sure I'm not the only
one who thought that. I did just watch them on a special
Holiday presentation of my favoirite "unwrapped" food
network program. The factory looks great and it's in
Illinois fairly close to me here in Indiana. They sure
do make a lot of vanilla! I'm just glad they do because
you know if you love to bake like I do that is what
makes every recipe taste bestter-vanilla. I bet you
can't think of a dessert recipe you make that doesn't
call for vanilla extract.
Recipe from their email:
Nielsen Massey Vanillas’ Vanilla Cinnamon Apples add an
element of sophistication to this year’s festivities and
are sure to have guests lining up for seconds. The
recipe, found below, combines the savory flavor of
Nielsen-Massey’s Madagascar Bourbon Pure Vanilla Bean
Paste with the delicious tart taste of fall apples to
create a treat that is overflowing with gooey goodness.
Vanilla Cinnamon Apples
Serves 4
4 baking apples
3 tbsp. butter
¾ cup firmly packed dark brown sugar
1 tsp. Nielsen-Massey Madagascar Bourbon Pure Vanilla
Bean Paste
1 ½ tsp. cinnamon
¼ tsp. allspice
1 tbsp. brandy
¼ cup raisins
¼ cup walnuts
Pinch of salt
Preheat the oven to 350 degrees. Lightly coat the bottom
of a shallow baking dish with nonstick cooking spray.
Cut a thin slice from the bottom of each apple so it
will stand upright. Scoop out the core of each apple
from the top down with the small end of a melon ball
cutter, making sure not to core all the way through the
apple.
Combine the butter, brown sugar and vanilla paste in a
medium saucepan and cook over low heat until the butter
is melted, stirring frequently. Remove from the heat and
stir in the cinnamon, allspice, brandy, raisins, walnuts
and salt. Fill the apples with equal amounts of the
filling using a teaspoon. Place the apples in the
prepared baking dish. Bake for 20 minutes or until
caramelized and fork tender.

I was so hoping to try all of these extracts since I do
so much baking year round, but I did get to try the Vanilla
Extract. The flavor did make a huge difference over the imitation
vanilla produts I have been using. You could really tell in the
finished baked goods that they had the full fragrance of vanilla
and the flavor tasted more overall rounded. I'm so glad I finally
tasted the difference!
I'll have to find some of these at the store
because I know I have got to try the orange and lemon
ones. I use orange and lemon zest in everything I make
already because it just adds such a citrus freshness to

I did make the Cinnamon Apples recipe above without the
Brandy and they were scrumptious. A great fit for any
Holiday table this Christmas. I substituted orange juice
for the brandy in my version and it was also excellent. Of
course by all means if you like the taste of brandy use it
since the alcohol will cook off anyway. I'm just personally
not a fan of the taste of any alcoholic beverages.

So in closing this post I just want to say that yes I know pure vanilla
extracts are more expensive than the imitations. That's why we all
started buying them in the first place,right? Now though that I have
taken my own pure vs. imitation baking challenge I can tell you I'm not
switching back. It's going to be worth the extra pennies it takes to
get the real thing. Just think about how much time we spend putting all
of these baked goodies out. I don't want to waste my time using imitation
